Our Story

About Us

Mandy and Marcus are best friends and owners of The Munchie Truck LLC. It was through the food truck industry in which they met each other, and began discussing their individual goals for one day owning a food truck. Both of them, growing up in the south valley and seeing the immense poverty, thought that owning a food truck seemed so far out of reach. This changed when they decided to let their products and services speak for them. Instead of getting in over their heads with loans and a big over head costs, they decided to sacrifice aspects such as size and started small, quite literally. One night, as they were talking about trucks, Marcus had the idea of converting a school bus into a food truck. At first, Mandy was hesitant, but it was creative and unique. A few weeks later, Mandy found an ad on Facebook for a “short” school bus and thus the adventure began, with the “small” but mighty “Cool Bus”...

We proudly made it to the semi finals of Edible the magazines Green Chile Cheeseburger Smackdown! While we didn’t take home the prize; we got enough feedback and heard the new members of, The Munchie Truck Army loud and clear (we gave out over 100 members stickers). We have decided to bring back the, Heart of the Valley, for a while longer. So why not come out and judge it for yourself? All local, always.

We are 100% local and use only organic sourced produce

Our fresh produce is supplied by Agri-Culture Network and is freshly grown by small farmers with the intent of strengthening the agrarian and cultural heritage of our land and its residents.

Also all our eating ware is made compostable to use in the soil and to help cultivate land.
